Thursday, October 25th: "Sourcing Sustainable Food" Panel at 6 pm in Beans Coffee Shop (in the School of Hotel, Restaurant and Hospitality Management).
Confirmed panelists include the Sodexo Director of DU Dining, a local urban farmer that runs Farm Yard CSA, and the founder of GreenLeaf, an urban farm that engages youth in food justice issues (from learning sustainable agricultural practices to running a farmers market).
As for why we are celebrating Food Week on campus, I think that DU is fortunate to be located in a community where there is increasingly more focus on food sustainability and food justice issues, particularly around urban agriculture, and we want to celebrate and connect with these community-wide efforts. For Food Week, we will highlight how DU is engaging in the urban agriculture movement with tours of our permaculture garden and new hydroponics system. We also want to introduce our students, faculty, and staff to some of the challenges of sourcing sustainable food in Denver, such as when students are not on campus during the short growing season.
